Crispy, golden fritters made with salted codfish, spring onions, scotch bonnet, and thyme. A Jamaican breakfast staple that works at any hour. The salt fish needs to be soaked overnight but it is worth every minute.

Ingredients

·1 lb salted cod soaked overnight and flaked
·1.5 cups flour
·1 tsp baking powder
·1 egg
·1/2 cup water
·3 spring onions chopped
·1 scotch bonnet minced
·1 tsp fresh thyme
·Black pepper
·Oil for frying

Instructions

1.Soak salt fish overnight in cold water changing water twice.
2.Boil fish 15 minutes, drain, cool, and flake removing all bones.
3.Mix flour, baking powder, egg, and water into a batter.
4.Fold in salt fish, spring onions, scotch bonnet, and thyme.
5.Drop spoonfuls into 350°F oil and fry until golden, about 3-4 minutes per side.
6.Drain on a rack. Serve hot with hot sauce.
