Made to order, eaten immediately. Ripe Hass avocados, white onion, serrano chile, cilantro, lime, and salt. Nothing more. The secret is not smashing it completely smooth.

Ingredients

·3 ripe Hass avocados
·1/2 white onion finely diced
·1 serrano or jalapeño minced
·1/4 cup fresh cilantro chopped
·Juice of 2 limes
·1 tsp kosher salt
·1 roma tomato seeded and diced optional

Instructions

1.Halve and pit avocados. Scoop flesh into a bowl.
2.Add onion, chile, cilantro, lime juice, and salt.
3.Mash with a fork until mostly smooth with some chunks.
4.Taste and adjust seasoning — it should be bright and punchy.
5.Press plastic wrap directly on surface to store.
6.Always make more than you think you need.
