·1 whole chicken 4-5 lbs
·3 carrots, 3 celery stalks, 1 large onion
·4 cloves garlic
·2 bay leaves, fresh thyme and parsley
·8 oz egg noodles
·Salt and pepper
1.Place whole chicken in a large pot, cover with cold water.
2.Add vegetables, garlic, and herbs. Bring to a boil.
3.Skim foam, reduce heat, simmer 1.5-2 hours.
4.Remove chicken, strain broth, discard solids.
5.Shred chicken meat, dice fresh carrots and celery.
6.Return broth to pot with fresh vegetables. Simmer 15 min.
7.Add noodles, cook until tender. Add chicken. Season generously.
