The meatloaf that converts meatloaf skeptics. Beef and pork blend with onion, garlic, fresh herbs, and a ketchup-brown sugar glaze that caramelizes in the oven. Slices clean, tastes like home.

Ingredients

·1 lb ground beef 80/20
·1/2 lb ground pork
·1 onion finely diced
·3 cloves garlic minced
·2 eggs
·1/2 cup breadcrumbs soaked in milk
·2 tbsp Worcestershire
·Salt, pepper, fresh thyme
·Glaze: ketchup, brown sugar, apple cider vinegar, Dijon

Instructions

1.Sauté onion and garlic until soft. Cool.
2.Combine all ingredients gently — do not overwork.
3.Form into a loaf on a parchment-lined baking sheet.
4.Mix glaze ingredients and brush half over the loaf.
5.Bake at 350°F for 30 minutes.
6.Apply remaining glaze and bake another 30 minutes.
7.Rest 10 minutes before slicing.
