Ingredients

·1 lb chicken breast, sliced into strips
·3 bell peppers (any color), sliced
·1 large onion, sliced
·8 oz sliced mushrooms (optional, but I love them!)
·2 tbsp olive oil
·1 tbsp taco seasoning
·8 small flour tortillas
·1 lime, cut into wedges

Directions

1.Preheat oven to 400°F.
2.Place chicken, peppers, and onions on a large sheet pan.
3.Drizzle with olive oil, sprinkle with taco seasoning, and toss to coat.
4.Roast for 20 minutes until chicken is cooked through and veggies are charred.
5.Squeeze fresh lime juice over everything and serve with warm tortillas.
