·4 ripe tomatoes diced
·1 red onion finely diced
·1 green chile minced
·1/2 cup fresh cilantro chopped
·Juice of 2 lemons
·1 tsp salt
·1/2 tsp sugar

1.Dice tomatoes and place in a colander to drain excess liquid 10 minutes.
2.Soak red onion in cold water 10 minutes to mellow the bite. Drain.
3.Combine tomatoes, onion, chile, and cilantro.
4.Dress with lemon juice, salt, and sugar.
5.Toss gently and taste — adjust seasoning.
6.Add avocado if using just before serving. Best eaten fresh.
