·8 oz sweet potato glass noodles
·1 carrot, julienned
·2 cups spinach
·4 oz mushrooms, sliced
·3 tbsp soy sauce
·1 tbsp sugar
·1 tbsp sesame oil
·1 tbsp sesame seeds
1.Boil noodles according to package, then drain and rinse with cold water.
2.Sauté all vegetables in a pan until tender.
3.Add noodles to the pan with soy sauce, sugar, and sesame oil.
4.Toss over medium heat for 2 minutes until well coated.
5.Garnish with sesame seeds.
