·4 mahi-mahi fillets
·Mango-habanero glaze: 2 ripe mangoes pureed, 2 habaneros, 2 tbsp honey, lime juice, fish sauce, garlic
·Coconut rice: jasmine rice cooked in coconut milk
·Papaya slaw: papaya, cabbage, lime, cilantro, jalapeño
1.Blend mango, habanero, honey, lime, fish sauce, and garlic. Simmer 10 minutes until thick.
2.Season mahi-mahi and sear in a hot pan 3-4 minutes per side.
3.Brush glaze on fish in the last 2 minutes. Let it caramelize.
4.Make coconut rice using coconut milk in place of water.
5.Toss papaya slaw ingredients with lime juice.
6.Serve glazed fish over coconut rice with papaya slaw.
