The real deal Tex-Mex queso. Velveeta is the secret — I said what I said. With roasted poblano, tomatoes, and spiced ground beef stirred in. Impossible to stop eating.

Ingredients

·16 oz Velveeta cubed
·1 can Rotel tomatoes drained
·1 poblano pepper roasted and diced
·1/2 lb ground beef browned and seasoned
·1/2 cup whole milk
·1 tsp cumin, 1 tsp chili powder
·Fresh cilantro to garnish

Instructions

1.Brown ground beef with cumin and chili powder. Drain.
2.Melt Velveeta in a saucepan over low heat with milk.
3.Stir in Rotel, poblano, and seasoned beef.
4.Thin with additional milk to desired consistency.
5.Transfer to a slow cooker to keep warm.
6.Garnish with cilantro and serve with warm tortilla chips.
