·16 oz Velveeta cubed
·1 can Rotel tomatoes drained
·1 poblano pepper roasted and diced
·1/2 lb ground beef browned and seasoned
·1/2 cup whole milk
·1 tsp cumin, 1 tsp chili powder
·Fresh cilantro to garnish
1.Brown ground beef with cumin and chili powder. Drain.
2.Melt Velveeta in a saucepan over low heat with milk.
3.Stir in Rotel, poblano, and seasoned beef.
4.Thin with additional milk to desired consistency.
5.Transfer to a slow cooker to keep warm.
6.Garnish with cilantro and serve with warm tortilla chips.
