Ingredients

1.1 large eggplant
2.1/4 cup tahini
3.2 tbsp lemon juice
4.1 clove garlic
5.2 tbsp olive oil

Instructions

1.Roast the eggplant until skin is charred and flesh is soft.
2.Scoop flesh into a bowl and mash with tahini, lemon, and garlic.
3.Stir until creamy and top with olive oil.

Serve with torn up pita bread.
