Homemade white beans slow-cooked in a rich tomato sauce with smoked bacon, Worcestershire, and fresh thyme. On toasted sourdough with a fried egg on top and a drizzle of hot sauce. The dish that earned its upgrade.

Ingredients

·2 cans cannellini beans drained
·4 strips smoked bacon diced
·1 onion diced, 3 cloves garlic
·1 can crushed tomatoes
·1 tbsp Worcestershire sauce
·1 tsp brown sugar
·Fresh thyme
·4 thick slices sourdough toasted
·4 fried eggs
·Hot sauce to serve

Instructions

1.Cook bacon until crispy. Remove and leave fat in pan.
2.Sauté onion and garlic in bacon fat until soft.
3.Add tomatoes, Worcestershire, sugar, and thyme.
4.Simmer 15 minutes. Add beans and warm through.
5.Return bacon to pan. Season well.
6.Pile beans on sourdough toast. Top with fried egg and hot sauce.
