·3–4 very ripe bananas (the spottier, the better)
·1/2 cup melted butter
·3/4 cup sugar (can reduce to 1/2 cup if you prefer less sweet)
·1 egg, beaten
·1 tsp vanilla extract
·1 tsp baking soda
·Pinch of salt
·1 1/2 cups all-purpose flour
·1/2 cup chopped walnuts or pecans

1.Preheat oven to 350°F. Grease a standard loaf pan.
2.In a bowl, mash the bananas until smooth.
3.Stir in melted butter.
4.Mix in sugar, egg, and vanilla.
5.Sprinkle baking soda and salt over mixture, then stir.
6.Fold in flour until just combined (don’t overmix).
7.Add any extras like nuts or chocolate chips.
8.Pour into loaf pan and bake for 50–60 minutes, until a toothpick comes out clean.
9.Let cool slightly, slice thick, and serve warm.
My tip: Brush the top with a little melted butter & sprinkle of sugar right when it comes out of the oven for that bakery-style finish
