·1.5 lbs boneless chicken thighs
·¼ cup soy sauce
·3 tbsp brown sugar
·2 tbsp mirin (or honey)
·1 tbsp rice vinegar
·2 cloves garlic, minced
·1 tsp grated ginger
·1 tbsp oil
·1 tsp cornstarch + 2 tbsp water
1.Mix soy sauce, sugar, mirin, vinegar, garlic, ginger.
2.Heat oil; cook chicken 5–6 min per side.
3.Pour sauce in; simmer 3–4 minutes.
4.Add cornstarch slurry; thicken.
5.Slice and serve over rice with whatever garnish you have on hand.
