·3 cups cooked, cold rice
·2 eggs
·1 cup mixed veggies (peas, carrots, broccoli, mushrooms, corn, etc)
·3 tbsp soy sauce (or more. taste first)
·2 green onions, sliced
·2 tbsp oil
·2 cloves garlic, minced
1.Heat oil; scramble eggs, remove.
2.Sauté garlic and veggies.
3.Add rice; break up and stir-fry.
4.Stir in soy sauce and eggs.
5.Add green onions; toss and serve.
Note: I added some leftover chicken to mine.
