·2 sweet potatoes, cubed
·1 can (15 oz) black beans, drained
·8 small corn tortillas
·1 tsp chili powder
·1/2 tsp cumin
·1/2 cup shredded cabbage
·1 tbsp lime juice
Tip: Don't like cabbage? Make a quick guacamole to swap for the slaw!
1.Toss sweet potatoes with chili powder and cumin; roast at 400°F for 20 minutes.
2.Warm black beans in a pan.
3.Toss cabbage with lime juice.
4.Char tortillas over an open flame.
5.Fill tortillas with potatoes, beans, and cabbage slaw.
