For the Shrimp

Ingredients

·1 lb shrimp, peeled & deveined
·1 cup flour
·1 cup cold sparkling water
·1 egg
·Oil for frying

Instructions

1.Heat oil to 350°F.
2.Mix flour, egg, and cold water lightly.
3.Dip shrimp in batter.
4.Fry 2–3 minutes until golden.
5.Drain on paper towels; serve hot.

For the Tentsuyu (Sauce)

Ingredients

·1 cup dashi stock (see note)
·¼ cup soy sauce
·¼ cup mirin
·1 tsp sugar
·Optional: grated daikon radish (for serving)

Note: No dashi? Sub with 1 cup water + 1 tsp instant dashi powder, or even a light chicken broth in a pinch (not traditional, but works).

Instructions

1.Combine dashi, soy sauce, mirin, and sugar in a small saucepan.
2.Bring to a gentle simmer over medium heat.
3.Stir until sugar dissolves (2–3 minutes).
4.Remove from heat; let cool slightly.
5.Serve warm or room temp with grated daikon if desired.
