Eight layers of fresh pasta sheets, slow-cooked Bolognese, ricotta filling, and béchamel. This takes most of Sunday and makes the whole week better. Serves twelve and gets better the next day.

Ingredients

·Fresh or dried lasagna sheets
·Bolognese: beef, pork, onion, carrot, celery, tomato, wine, milk
·Ricotta filling: ricotta, eggs, parmesan, fresh basil
·Béchamel: butter, flour, milk, nutmeg
·2 cups shredded mozzarella

Instructions

1.Make Bolognese and simmer 2+ hours.
2.Make béchamel.
3.Mix ricotta with eggs, parmesan, and basil.
4.Layer: sauce, pasta, ricotta, béchamel, mozzarella. Repeat.
5.Top with béchamel and mozzarella.
6.Cover and bake at 375°F for 45 minutes. Uncover 15 more minutes.
7.Rest 20 minutes before cutting.
