·8 large eggs for poaching
·2 tbsp white vinegar
·3 egg yolks, 1 tbsp lemon juice
·1/2 cup clarified butter warm
·Salt, cayenne, white pepper
1.Blend yolks and lemon juice. Slowly stream in warm butter while blending.
2.Season hollandaise with salt and cayenne. Keep warm.
3.Bring a wide pot of water to a gentle simmer. Add vinegar.
4.Create a gentle whirlpool, drop in eggs one at a time. Poach 3 minutes.
5.Assemble: muffin, bacon, poached egg, hollandaise.
6.Garnish with paprika and fresh chives.
