Ingredients

·8 oz rice noodles
·1 lb shrimp, peeled & deveined
·2 eggs
·3 tbsp fish sauce
·2 tbsp brown sugar
·1 tbsp tamarind paste
·1 tbsp lime juice
·2 tbsp vegetable oil
·3 cloves garlic, minced
·1 cup bean sprouts
·3 green onions, sliced
·¼ cup crushed peanuts
·Lime wedges

Instructions

1.Soak noodles in warm water until softened; drain.
2.Mix fish sauce, sugar, tamarind, and lime juice.
3.Heat oil in a wok; cook shrimp 2–3 minutes, remove.
4.Add garlic, then eggs; scramble.
5.Add noodles and sauce; toss well.
6.Return shrimp; add sprouts and green onions.
7.Cook 2–3 minutes until glossy.
8.Top with peanuts and serve with lime.
