·1 onion diced
·3 cloves garlic minced
·1 tsp fresh ginger grated
·2 carrots grated
·1 red and 1 green pepper diced
·2 tsp curry powder
·1 tsp paprika
·1 can chopped tomatoes
·1 can baked beans
·Salt, pepper, fresh cilantro
1.Fry onion in oil over medium heat until soft.
2.Add garlic, ginger, curry powder, and paprika. Stir 1 minute.
3.Add peppers and carrots. Cook 5 minutes.
4.Add tomatoes and simmer 15 minutes.
5.Stir in baked beans and cook 5 more minutes.
6.Season and finish with fresh cilantro. Serve warm or at room temperature.
