Ingredients

·1 cup quinoa, cooked
·1 zucchini, chopped
·1 bell pepper, chopped
·1 cup cherry tomatoes
·2 tbsp tahini
·1 tbsp lemon juice
·2 tbsp olive oil
·Salt to taste

Tip: Get creative with the vegetables. I even love adding pickled red onions!

Directions

1.Toss zucchini, peppers, and tomatoes with olive oil and roast at 400°F for 15 minutes.
2.Whisk tahini and lemon juice with a splash of water to make a dressing.
3.Divide quinoa into bowls.
4.Top with roasted vegetables and drizzle with tahini sauce.
