Ingredients

·1 butternut squash, peeled and cubed
·1 can (14 oz) coconut milk
·2 cups vegetable broth
·1 tsp fresh ginger, grated
·1 onion, chopped
·1 tbsp olive oil
·Salt & Pepper to taste
·Creme fraiche/yogurt/sour cream/croutons (optional topping)

Steps

1.Roast squash at 400°F for 30 minutes.
2.Sauté onion and ginger in oil.
3.Add squash, broth, and coconut milk to the pot.
4.Simmer for 10 minutes, then blend until completely smooth. (An immersion blender works great, if you have one.)
