A smash burger the way it’s meant to be. Fresh-ground chuck and brisket, pressed thin on a blazing hot griddle until the edges crisp and caramelize. American cheese melted just right, stacked with pickles and a house sauce, all on a soft brioche bun. Simple. Done right.

Ingredients

·1 lb 80/20 ground beef
·American cheese slices
·4 brioche buns
·Special sauce: mayo, ketchup, pickles, mustard
·Iceberg lettuce, tomato slices
·Dill pickles, white onion
·Salt and pepper

Instructions

1.Divide beef into 4 loose balls — do not pack tight.
2.Heat cast iron griddle over high heat until smoking.
3.Season beef balls, place on griddle, smash flat immediately with a spatula.
4.Cook 2 minutes until edges are crispy and brown.
5.Flip, immediately add cheese. Add a splash of water and cover 30 seconds.
6.Build: bottom bun, sauce, lettuce, tomato, patty, pickles, onion, top bun.
