Ingredients

·1.5 cups Arborio rice
·4 cups warm vegetable broth
·1/2 cup ricotta cheese
·1 lemon, zested and juiced
·1/4 cup Parmesan
·1 shallot, minced

Directions

1.Sauté shallot in olive oil. Add rice and toast for 1 minute.
2.Add broth one ladle at a time, stirring until absorbed.
3.Once rice is tender, stir in ricotta, lemon zest, juice, and Parmesan.
4.Serve immediately.

Parsley and lemon zest or chiffonade lemon peel to garnish.
