Thin-sliced flank steak velveted in baking soda and soy, wok-seared in batches, and tossed in a glossy oyster and hoisin sauce with crisp-tender broccoli. Better than takeout by a mile.

Ingredients

·1.5 lbs flank steak thinly sliced against the grain
·Velveting marinade: baking soda, soy sauce, cornstarch
·4 cups broccoli florets
·Sauce: oyster sauce, hoisin, soy, sesame oil, broth, cornstarch
·Garlic and ginger minced
·Scallions to garnish

Instructions

1.Toss sliced beef with velveting marinade. Rest 30 minutes.
2.Make sauce by combining all ingredients.
3.Blanch broccoli in boiling salted water 2 minutes. Drain.
4.Sear beef in batches in a hot wok. Remove.
5.Sauté garlic and ginger, add sauce, bring to a simmer.
6.Add beef and broccoli, toss until coated and glossy.
