·4 large flour tortillas
·6 eggs scrambled
·1/2 lb Mexican chorizo cooked and crumbled
·1 cup black beans drained
·1 cup shredded cheddar
·1 avocado sliced
·Salsa and sour cream
·Salt and pepper
1.Scramble eggs with salt and pepper until just set.
2.Warm tortillas in a dry skillet.
3.Layer eggs, chorizo, beans, cheese, and avocado on each tortilla.
4.Fold sides in and roll tightly.
5.Toast seam-side down in skillet until golden.
6.Serve with salsa and sour cream.
