·1 tin sardines in olive oil or water
·1 cup rough chopped tomatoes
·1/2 cucumber, diced
·1/4 cup kalamata olives, pitted
·1 tbsp red onion, thinly sliced
·1 tbsp red wine vinegar
·Fresh parsley
·Feta (optional…don’t come after me about cheese and fish not going together!)
1.In a medium bowl, combine tomatoes, cucumber, olives, and onion.
2.Add the sardines and a drizzle of the oil from the tin.
3.Toss gently with red wine vinegar.
4.Garnish with plenty of fresh parsley and serve immediately.
