Four cheeses, low heat, and patience. The mayo is the secret to the perfect crust. Have you tried a grilled cheese with mayo on the OUTSIDE? Life-changing.

Ingredients

·8 slices bread (homemade if you can do it!)
·2 tbsp mayonnaise
·Gruyère, sharp cheddar, fontina, and American cheese (or whatever you have on hand!)
·Dijon mustard (optional)

Instructions

1.Spread mayonnaise on the outside of each bread slice.
2.Spread a thin layer of mayo on the inside too! (And for you mayo-haters, butter will do on both sides)
3.Layer cheeses generously on the inside.
4.Cook in a skillet over medium-low heat.
5.Press gently. Cook 4-5 minutes per side until deep golden.
6.The low heat melts the cheese before the bread burns.

Pro Tip: You can cover the skillet or griddle with a glass lid for a few minutes to use the hot steam to melt the cheese.
