·4 large flour tortillas steamed
·Cilantro-lime rice
·2 cups refried pinto beans warmed
·1.5 cups shredded Monterey Jack
·Sour cream, guacamole, salsa
·Fresh cilantro
1.Steam tortillas wrapped in a damp towel in microwave 30 seconds.
2.Lay flat on a work surface.
3.Layer rice, beans, cheese, sour cream, guac, and salsa across center.
4.Fold sides in and roll from bottom, tucking tightly.
5.Toast seam-side down in a dry cast iron until sealed and golden.
6.Wrap in foil to hold its shape.
