·2 lbs chicken thighs boneless
·Jerk marinade: scotch bonnet, allspice, thyme, cinnamon, garlic, ginger, soy sauce, brown sugar, lime juice, olive oil
·Large flour tortillas or flatbreads
·Mango slaw: mango, cabbage, lime, cilantro
·Coconut yogurt sauce: yogurt, coconut milk, lime
1.Blend all jerk marinade ingredients. Marinate chicken overnight minimum.
2.Grill over high heat until charred and cooked through.
3.Rest 5 minutes and slice.
4.Make mango slaw by combining all ingredients with lime juice.
5.Warm flatbreads.
6.Build wraps with chicken, slaw, and coconut yogurt drizzle.
