Light, golden, and impossibly fluffy. These buttermilk pancakes have been my Sunday morning ritual for years. Stack them high and drown them in real maple syrup.

Ingredients

·2 cups all-purpose flour
·2 tbsp sugar
·2 tsp baking powder
·1 tsp baking soda
·1/2 tsp salt
·2 cups buttermilk
·2 eggs
·4 tbsp melted butter
·1 tsp vanilla extract

Instructions

1.Whisk flour, sugar, baking powder, baking soda, and salt together.
2.In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla.
3.Fold wet into dry until just combined — lumps are fine.
4.Rest batter 5 minutes.
5.Cook on a buttered griddle over medium heat until bubbles form, flip once.
6.Serve immediately with maple syrup and butter.
