Recipe

Ingredients

·1 lb chicken pieces
·1 plantain, sliced
·1 ear of corn, cut into chunks
·1 cassava root (yuca), chopped (can sub tarro root)
·4 cups chicken broth
·1 tbsp sofrito (homemade or from the jar works too)

Directions

1.Brown the chicken in a large pot.
2.Add sofrito, broth, corn, plantain, and cassava.
3.Simmer for 30-40 minutes until vegetables are tender and the broth is thickened.
