·3 lbs Yukon Gold potatoes
·4 hard-boiled eggs chopped
·3 celery stalks diced
·1/2 cup diced dill pickles
·1/3 cup sweet pickle relish
·3/4 cup mayonnaise
·2 tbsp yellow mustard
·1 tbsp apple cider vinegar
·Salt, pepper, paprika
1.Boil potatoes whole in salted water until fork tender. Cool completely.
2.Peel and cube into 3/4 inch pieces.
3.Mix mayo, mustard, vinegar, and relish.
4.Fold dressing into potatoes with eggs, celery, and pickles.
5.Season generously with salt and pepper.
6.Chill 2 hours. Dust with paprika before serving.
