Grated potato pressed into a crispy golden cake in a cast iron pan and topped with crème fraîche, cold-smoked salmon, capers, red onion, and fresh dill. Swiss breakfast meets Nordic brunch.

Ingredients

·4 large waxy potatoes grated
·3 tbsp clarified butter
·Salt and pepper
·150g cold-smoked salmon
·4 tbsp crème fraîche
·2 tbsp capers
·1/4 red onion thinly sliced
·Fresh dill
·Lemon wedges

Instructions

1.Grate potatoes and squeeze out ALL moisture in a clean towel.
2.Season with salt and pepper.
3.Heat clarified butter in a cast iron pan. Add potato mixture and press flat.
4.Cook over medium heat 8-10 minutes until bottom is deep golden.
5.Flip onto a plate then slide back into pan. Cook another 8 minutes.
6.Slide onto a board and top with crème fraîche, salmon, capers, onion, and dill.
