Sweet fried plantains replace tortilla chips as the base for this Caribbean-inspired nacho platter. Topped with black beans, pulled jerk chicken, mango salsa, coconut crema, and cotija. Absolutely addictive.

Ingredients

·3 ripe plantains sliced and fried golden
·1 cup black beans seasoned
·1 cup pulled jerk chicken
·Mango salsa: mango, red onion, jalapeño, lime, cilantro
·Coconut crema: sour cream, coconut milk, lime
·Cotija cheese crumbled
·Fresh cilantro

Instructions

1.Fry plantain slices in oil until golden on both sides. Drain.
2.Arrange on a platter as the base layer.
3.Top with warm black beans and jerk chicken.
4.Make mango salsa and coconut crema.
5.Drizzle crema over everything.
6.Finish with mango salsa, cotija, and fresh cilantro.
