Recipe

Ingredients

·2 cans fava beans drained
·4 cloves garlic minced
·Juice of 2 lemons
·1/4 cup extra-virgin olive oil
·1 tsp cumin
·Salt and pepper
·Fresh parsley and tomatoes to top
·Fried eggs optional
·Warm pita to serve

Instructions

1.Heat fava beans in a saucepan with a splash of water.
2.Mash roughly — leave some whole for texture.
3.Stir in garlic, lemon juice, olive oil, and cumin.
4.Season generously with salt and pepper.
5.Transfer to a serving bowl. Top with parsley and diced tomatoes.
6.Drizzle with extra olive oil. Serve with warm pita and fried eggs.
