A deeply spiced Caribbean fish stew with coconut milk, scotch bonnet, chadon beni, and root vegetables. The kind of stew that fills the kitchen with the most incredible smell and warms you from the inside out.

Ingredients

·2 lbs firm white fish snapper or grouper cut into pieces
·1 can coconut milk
·1 scotch bonnet pepper
·4 cloves garlic, 1 onion diced
·2 carrots, 2 potatoes cubed
·1 tbsp green seasoning: chadon beni, parsley, garlic, onion blended
·1 tsp curry powder, 1 tsp allspice
·Fresh lime juice
·Salt and pepper

Instructions

1.Season fish with green seasoning, lime juice, and salt.
2.Sauté onion, garlic, and scotch bonnet in oil.
3.Add curry powder and allspice. Stir 1 minute.
4.Add coconut milk, carrots, and potatoes. Simmer 15 minutes.
5.Add fish gently and cook 8-10 minutes until just cooked through.
6.Adjust seasoning and serve with rice or roti.
