A whole bone-in ham scored in a diamond pattern and studded with cloves, glazed with brown sugar, Dijon, orange juice, and bourbon until the exterior is lacquered and caramelized.

Ingredients

·1 bone-in smoked ham 8-10 lbs
·Whole cloves for studding
·Glaze: brown sugar, Dijon, orange juice, bourbon, apple cider vinegar
·Fresh orange slices for garnish

Instructions

1.Score ham in a diamond pattern, cutting through skin.
2.Stud each diamond with a whole clove.
3.Make glaze by combining all ingredients and simmering until thick.
4.Bake ham at 325°F for 15 minutes per pound.
5.Glaze every 20 minutes in the last hour.
6.Let rest 20 minutes before slicing.
