Dry rubbed, wrapped in foil for the first three hours, then unwrapped and glazed for the last hour until the bark sets and the glaze caramelizes. Fall-off-the-bone and proud of it.

Recipe

Ingredients

·2 racks baby back ribs
·Dry rub: paprika, brown sugar, garlic, cumin, chili powder, salt, pepper
·BBQ sauce for glazing
·Apple juice for the foil packet

Instructions

1.Remove membrane from the back of ribs.
2.Apply dry rub generously on all surfaces.
3.Smoke or bake at 225°F for 3 hours.
4.Wrap tightly in foil with a splash of apple juice.
5.Continue cooking 2 more hours.
6.Unwrap, glaze with BBQ sauce, cook uncovered 45-60 more minutes.
7.Slice between bones and serve.
