·2 lbs chicken breasts or thighs
·1 onion diced, 4 cloves garlic
·2 chipotles in adobo
·2 cans fire-roasted tomatoes
·4 cups chicken broth
·1 cup corn
·1 can black beans
·2 tsp cumin, 1 tsp chili powder
·Tortilla strips, avocado, cotija, lime to serve
1.Sauté onion and garlic until soft.
2.Add chipotles, tomatoes, broth, and spices. Add chicken.
3.Simmer 25-30 minutes until chicken is cooked through.
4.Remove chicken and shred. Return to pot with corn and beans.
5.Simmer 10 more minutes.
6.Top each bowl with tortilla strips, avocado, cotija, and lime.
