Recipe

First make the slaw

·1/2 head green cabbage, thinly shredded
·1 large carrot, grated
·1/4 white onion, thinly sliced
·1 jalapeño, minced (optional)
·1/2 cup white vinegar
·1 tbsp sugar
·1/2 tsp salt
·1/2 tsp dried oregano
1.Combine the shredded cabbage, carrots, onion, and jalapeño in a large mixing bowl.
2.In a separate small bowl, whisk together the vinegar, sugar, salt, and oregano until dissolved.
3.Pour the dressing over the veggies and toss thoroughly to combine.
4.Let the slaw sit for at least 15 minutes before serving so the flavors can meld and the cabbage softens slightly.

Now for the Pupusas

·1 cup corn flour (masa harina)
·3/4 cup water
·1/2 cup refried beans
·1/2 cup mozzarella, shredded (I like it oozing out so used 1 Cup)
·1 tbsp oil
1.Mix masa and water to form a soft dough.
2.Flatten a ball of dough, add a spoonful of beans and cheese in the center, and seal it.
3.Gently flatten into a disc and cook on a hot skillet until golden.
·If you don't like refried beans, you can omit. Mix a bit of water or milk in a bowl with the cheese before you stuff the dough.
