·4 large eggs
·1 can (28 oz) crushed tomatoes
·1 bell pepper, diced
·1 onion, diced
·2 cloves garlic, minced
·1 tsp cumin
·1 tsp paprika
·Parsley garnish (optional)
1.Sauté onion and pepper until soft.
2.Add garlic and spices, then stir in crushed tomatoes.
3.Simmer for 10 minutes until thickened.
4.Make small wells in the sauce and crack eggs into them.
5.Cover and cook for 5-8 minutes until whites are set.
