·Double pie crust: flour, butter, ice water, salt*
·6 Honeycrisp apples peeled and sliced
·3/4 cup brown sugar
·2 tsp cinnamon, 1/2 tsp nutmeg
·1 tbsp bourbon
·3 tbsp cornstarch
·2 tbsp butter diced
·Egg wash, turbinado sugar
·2 1/2 cups all-purpose flour
·1 cup (2 sticks) unsalted butter, very cold and cut into cubes
·1 teaspoon kosher salt
·6–8 tablespoons ice water
1.Make pie crust and refrigerate at least 1 hour.
2.Toss apples with sugar, spices, bourbon, and cornstarch.
3.Line pie dish with one crust, fill with apples, dot with butter.
4.Top with second crust, crimp edges, cut vents. (Try lattice or another intricate design, if you're being brave. Obviously I did lattice this time.)
5.Brush with egg wash and sprinkle turbinado sugar (optional).
6.Bake at 425°F 20 minutes, reduce to 375°F, bake 40-45 more minutes.
