·3 lbs sweet potatoes
·4 tbsp brown butter
·1/2 cup brown sugar
·2 eggs
·1/2 cup heavy cream
·1 tsp vanilla, 1 tsp cinnamon
·Pecan streusel: flour, brown sugar, butter, pecans, cinnamon
·OR mini marshmallows for toasting
1.Roast sweet potatoes at 400°F until very tender. Scoop flesh.
2.Beat with brown butter, sugar, eggs, cream, vanilla, cinnamon.
3.Pour into a buttered baking dish.
4.Top with pecan streusel or marshmallows depending on your people.
5.Bake at 350°F for 25-30 minutes until topping is golden.
6.Marshmallow version: broil the last 2 minutes for toasted tops.
