·2 cups cooked brown lentils
·2 cups mashed potatoes
·1 cup diced carrots
·1 cup peas
·1 onion, diced
·2 tbsp tomato paste
·1 cup vegetable broth
·1 tsp thyme
·1 tbsp olive oil
1.Preheat oven to 400°F.
2.Sauté onion and carrots in olive oil until soft.
3.Stir in tomato paste, lentils, broth, and thyme; simmer for 5 minutes.
4.Pour mixture into a baking dish and top with mashed potatoes.
5.Bake for 20 minutes until the top is golden.
·Large ramekins/souffle dishes can be used instead of one large baking dish.
