Ingredients

·8 oz high-quality feta cheese, crumbled
·1/2 cup Greek yogurt (full fat preferred)
·1 clove garlic, minced
·1 tsp lemon zest
·1 tbsp extra virgin olive oil
·1/4 cup shelled pistachios, roughly chopped
·2-3 tbsp hot honey (or regular honey mixed with 1/2 tsp red pepper flakes)
·Fresh mint or thyme, for garnish
·Pita bread, crackers, or sliced cucumbers for serving

Instructions

1 Whip the Base: Place the crumbled feta, Greek yogurt, minced garlic, lemon zest, and olive oil into a food processor or high-speed blender.

2 Make it Smooth: Blend on high for 2 to 3 minutes, scraping down the sides as needed, until the mixture is completely smooth, light, and airy.

3 Plate: Spread the whipped feta onto a shallow serving plate or bowl. Use the back of a spoon to create "swirls" and deep wells in the cheese—this is where the honey will pool!

4 Add Texture: Sprinkle the chopped pistachios generously over the top.

5 The Drizzle: Warm the hot honey slightly if it’s thick, then drizzle it liberally over the feta and into the swirls.

6 Finish: Garnish with fresh mint leaves or a sprig of thyme for a pop of color.

7 Serve: Pair with warm, charred pita triangles or crisp veggies. This dip is best served at room temperature.
