·1 lb ziti or rigatoni
·1 lb Italian sausage casings removed
·1 onion, 4 cloves garlic
·2 cans crushed tomatoes
·2 cups ricotta
·2 eggs
·2 cups shredded mozzarella
·1 cup parmesan grated
·Fresh basil and oregano
1.Brown sausage, add onion and garlic, cook down.
2.Add tomatoes and herbs. Simmer 30 minutes.
3.Cook pasta 2 minutes under package time. Drain.
4.Mix ricotta with eggs, half the parmesan, salt, pepper.
5.Combine pasta, meat sauce, and ricotta mixture.
6.Pour into a baking dish. Top with mozzarella and remaining parmesan.
7.Bake at 375°F for 30-35 minutes until bubbly and golden.
