1 Prep the Sauce: In a small bowl, whisk together the mayonnaise, mustard, relish, and spices. Set aside in the fridge.
2 Portion the Beef: Divide the ground beef into 8 equal portions (about 2 oz each). Do not form tight patties; keep them as loose balls.
3 The Smash: Place a ball of beef directly onto a tortilla. Use your hand or a flat spatula to press the beef out in a very thin, even layer that covers almost the entire surface of the tortilla. Season the beef side generously with salt and pepper.
4 Sear: Heat a large non-stick skillet or griddle over medium-high heat. Place the tortilla, beef-side down, onto the hot pan. Press down firmly with a spatula to ensure maximum contact. Cook for 2–3 minutes until the beef is deeply browned and crispy.
5 Melt: Flip the taco over so the tortilla is now on the pan. Immediately place a slice of cheese over the beef. Cover the pan for 30 seconds to help the cheese melt while the tortilla toasts.
6 Dress: Remove from the pan. Top with shredded lettuce, onions, pickles, and a generous drizzle of the special sauce.
7 Serve: Fold in half and enjoy immediately while the edges are crispy!
