Smash Burger Taco The ultimate fusion! Juicy beef smashed thin onto a tortilla, seared until crispy, and topped with melty cheese and a zingy burger sauce.

Ingredients

·1 lb ground beef (80/20 mix is best)
·8 small flour tortillas (street taco size)
·8 slices American cheese
·Salt and black pepper to taste
·Shredded iceberg lettuce
·Diced white onions and sliced pickles

For the "Special Sauce"

·1/2 cup mayonnaise
·1 tbsp yellow mustard
·1 tbsp sweet pickle relish
·1/2 tsp garlic powder
·1/2 tsp onion powder
·1/2 tsp paprika

Instructions

1 Prep the Sauce: In a small bowl, whisk together the mayonnaise, mustard, relish, and spices. Set aside in the fridge.

2 Portion the Beef: Divide the ground beef into 8 equal portions (about 2 oz each). Do not form tight patties; keep them as loose balls.

3 The Smash: Place a ball of beef directly onto a tortilla. Use your hand or a flat spatula to press the beef out in a very thin, even layer that covers almost the entire surface of the tortilla. Season the beef side generously with salt and pepper.

4 Sear: Heat a large non-stick skillet or griddle over medium-high heat. Place the tortilla, beef-side down, onto the hot pan. Press down firmly with a spatula to ensure maximum contact. Cook for 2–3 minutes until the beef is deeply browned and crispy.

5 Melt: Flip the taco over so the tortilla is now on the pan. Immediately place a slice of cheese over the beef. Cover the pan for 30 seconds to help the cheese melt while the tortilla toasts.

6 Dress: Remove from the pan. Top with shredded lettuce, onions, pickles, and a generous drizzle of the special sauce.

7 Serve: Fold in half and enjoy immediately while the edges are crispy!
