·4 oz pancetta, diced
·2 eggs + 1 yolk
·1 cup grated Parmesan
·2 cloves garlic
·Black pepper
1.Cook pasta; reserve ½ cup pasta water.
2.Cook pancetta until crisp.
3.Whisk eggs and cheese.
4.Toss hot pasta with pancetta.
5.Remove from heat; mix in egg mixture.
6.Add pasta water as needed to achieve a creamy sauce.
