Prawns cooked in an obscene amount of garlic-infused olive oil with dried chiles and a splash of sherry. The oil becomes the sauce and the bread that soaks it up is better than the prawns. Almost.

Recipe

Ingredients

·1.5 lbs large prawns shell-on or peeled
·12 cloves garlic thinly sliced
·3 dried guindilla or arbol chiles
·1/2 cup good quality olive oil
·3 tbsp dry sherry or white wine
·Fresh parsley
·Salt
·Crusty bread mandatory

Instructions

1.Heat olive oil in a cazuela or cast iron pan over medium heat.
2.Add garlic and chiles. Cook slowly until garlic is golden — do not rush.
3.Add prawns and increase heat to medium-high.
4.Cook 2 minutes per side until pink.
5.Add sherry and let it sizzle for 30 seconds.
6.Top with parsley. Bring to the table immediately still sizzling.
